Salmon and Cream Cheese Spinach Bake

This is an easy one pan meal. Serve with spaghetti squash or hearts of palm pasta! Perfect for Lifestyle phase. An herb goat cheese is preferred.

Step 1
Preheat the oven to 390°F
Step 2
Spinach: Rinse the spinach leaves thoroughly to remove any grit and pat them dry.
Step 3
Tomatoes: Wash and slice the tomatoes into medium thickness.
Step 4
Pat the salmon fillets dry with paper towels.
Step 5
Season the veggies and fillet generously with salt, pepper, garlic powder, and oregano.
Step 6
Lay the fresh spinach evenly on the bottom of the dish and place the tomatoes, salmon and cream cheese in the middle. Drizzle with Olive Oil
Step 7
Bake for approximately 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
