Preheat oven to 400⁰F (205⁰C)

Line a muffin tin with cupcake liners

Method

In a large mixing bowl, sift together the flour, sugar, baking powder, and salt.

In another bowl, stir together the egg, milk, oil, and banana extract.

Pour the wet ingredients into the dry ingredients and stir with a rubber spatula until just combined. Add in the strawberries

Divide the batter evenly into the muffin tin

Bake for 15 to 18 minutes. When done, the muffin tops should slightly spring back when gently pressed upon with a finger.

Let cool for about 10 minutes before serving
