Step 1
Preheat the oven to 165 degrees Celsius and line a baking tray with baking paper
Step 2
Put the butter, icing sugar and vanilla exctract into a bowl and sort eletric mix on slow speed
Step 3
Once the icing sugar is mixed with the butter, crank the speed up to to full for 3 minutes. Mix until pale and airy
Step 4
Sieve the flour and cornflour into the bowl. Mix
Step 5
Prepare your piping bag and transfer the mixture into the bag, keeping a much air as possible.
Step 6
Pipe out the biscuits in a swirl with a nice flick of the wrist at the top to give the break-off a clean finish. Space them evenly across the baling tray.
Step 7
Bake for 12-14 minutes or until golden, then take out and cool completely.
Step 8
Meanwhile pour water into a saucepan and bring to boil. Put the chcolate squares into a heatproof bowl and put it on top of the gentle simmering water. Make sure that the bottom of the bowl doesn't touch the water.
Step 9
Stir until nearly melted so that its warm not hot.
Step 10
When the biscuits are cool and the melted chcolate is at the right temperature, dip half a biscuit into the chocolate. Repeat with the rest.
Step 11
Leave the biscuits to set until the chcolate is set. But don't put it in the fridge
