Instructions
Step 1
To proof yeast, in a glass combine 10g instant yeast (2.5 tbsp), 1/2tbsp sugar
Step 2
2tbsp lukewarm water. Mix well and set aside for 10min. After 10 minutes the mixture should be foamy and doubled in size, if not then discard and start again.
Step 3
For the dough, in a mixing bowl combine flour, lukewarm milk, egg yolks, yeast mixture, sugar and salt. Start mixing with the dough hook on a low speed, until it comes together (about 5 minutes), then add butter and continue beating for another 10 minutes, or until the dough is smooth and elastic.
Step 4
Then, take the dough from a mixing bowl, and form a ball. Grease the mixing bowl with 1tbsp olive oil, and place the dough back. Grease the top of the dough with the remaining olive oil, cover with a clean kitchen towel and place in a warm place to rise for 1-1.5 hours.
Step 5
When the dough doubles in size, transfer it to the floured surface, knead slightly and divide into two parts. One part put back into the bowl and cover with a towel. From another one form a log and divide it into small equal parts(the desired size of your doughnuts). Roll each one into a ball and using your fingers make a hole in the centre. Place them on parchment and cover with a towel. Let them rise for 30min. Repeat with the remaining dough.
Step 6
In a large pot heat up the vegetable oil (the temperature of the oil should be around 180C).
Step 7
Fry doughnuts from each side until golden brown, then remove them to the paper towel to drain. When cooled, place them in a fridge to chill for 20min.
Step 8
For the garnish, break the chocolate into small pieces, transfer to the bowl, and melt it in the microwave in 10-second pulses. Add the sunflower oil and mix until combined. On another plate prepare your favourite sprinkle.
Step 9
Dip the tops of the doughnuts into the chocolate glaze and then in sprinkles. Let cool in the fridge for 10 minutes until the glaze is set.
