Step 1
Toss the potatoes with olive oil, salt, and pepper. Roast in the oven at 200°C (392°F) for 25-30 minutes, or air-fry at 200°C for 15-20 minutes, shaking halfway.



Step 2
Mix up the dressing, my preferred method is to shake it in a small jar




Step 3
Warm the chicken. Heat a pan over medium heat. Add the cooked chicken with a splash of water or stock to keep it moist. Warm for 2-3 minutes, then remove from heat.

Step 4
Assemble the bowl. Place the roasted potatoes as the base. Top with warmed chicken and grated zucchini and carrot. Drizzle with dressing. Garnish with coriander and walnuts
