Instructions

Sour Milk

Step 1
Combine milk and lemon juice in a measuring cup.
Step 2
Let sit a minimum 5 minutes, optimally up to 15 minutes.

Batter

Step 3
Whip the shortening, brown sugar, and egg together in a bowl until creamy and homogeneous.
Step 4
Add the molasses and sour milk to the mixture and continue to stir until homogeneous.
Step 5
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves.
Step 6
Combine all wet and dry ingredients to a large bowl and mix slowly until fully combined.
Step 7
Scoop out batter using a table spoon or cookie scoop, mould into a sphere with your hands and press gently onto a cookie sheet.
Step 8
Optional: roll the balls of dough in granulated sugar or sprinkle sugar on top for aesthetics.
Step 9
Bake at 350°F for 12 - 15 minutes. The cookies should not spread or rise much but will crack on top and brown slightly on the bottom when done.
Step 10
Place directly onto a cooling rack.
