Easy Microwave Vanilla Mug Cake

Alright, imagine this: a warm, fluffy cloud of vanilla cake, all cozy in your favorite mug! That's what this recipe makes. It's super fast, so when you're craving something sweet, you can have it ready in just a couple of minutes. It's like a mini birthday cake, just for you, whenever you want! Plus, it's easy to change up! You can add sprinkles, or maybe a little bit of chocolate syrup on top. It's your own little cake adventure, ready in a mug!

Prepare your mug:

Choose a microwave-safe mug (roughly 12–16 oz capacity works well, as the cake will rise).
Mix Dry Ingredients:

Add flour, sugar, baking powder and salt (optional) directly into the mug. Give them a quick stir to combine.




Mix Wet Ingredients:

Pour in milk, oil and vanilla essense.

Mix thoroughly with a fork or small whisk until you get a smooth batter with no lumps. Make sure you scrape the edges of the mug so all the dry bits are incorporated.
Microwave Cooking:

Place the mug in your microwave and cook on high for 70–90 seconds. Tip: Start with 70 seconds. The cake should be set on top but still soft and moist in the center. Microwave ovens vary, so if it needs a few extra seconds, add them in small increments (5–10 seconds) until done.
Cool & Enjoy:

Carefully remove the mug (it will be hot!). Let it cool for a minute or two before digging in. Enjoy straight from the mug or tip it out onto a plate.
Icing:

If you would like icing, add smaller measurements of the ingredients, in the same steps as before and pour it onto your mug cake once it has cooled down.

The cake is done when it’s puffed up and the center is just set. Overcooking can make it dry, so it's better to undercook slightly and let the residual heat finish the job. If you ever have extras like a sprinkle of cinnamon or a spoonful of jam, they can be mixed into the batter before microwaving for a fun twist!
