Pineapple-Mint Jelly

Retro recipe from "My Great Recipes" packet of recipe cards. Should also be lovely with lemon balm instead of mint! Makes five 6-oz jars of jelly.

Instructions

Step 1
Measure sugar and set aside.
Step 2
In large saucepan, mix pineapple juice and water. Add fruit pectin, mixing well. Stir in a few drops of food coloring to tint mixture a "delicate" shade.
Step 3
Bring mixture to a hard boil, stirring. Mix in sugar; bring to a full rolling boil. Boil hard for 1 minute, stirring constantly.
Step 4
Remove from heat and add flavoring. Skim off any foam with a metal spoon. Poor jelly quickly into hot glass jars. Top with chopped mint (if using).
Step 5
Cover immediately with 1/8 inch hot paraffin and add lids. Store in a cool, dry place.
