To Make the Pudding:
Step 1
Mix chia seeds, coconut milk, vegan yogurt and 7/8 cup of water in medium sized glass container with lid.
Step 2
When measuring yogurt and water can use coconut milk container. 1/2 can of each.
Step 3
Let it sit covered in the fridge for 3-5 hours overnight. When done should have pudding like consistency.
Step 4
Store in fridge and eat within 48 hours.
To Make the Syrup:
Step 5
Melt vegan butter in saucepan.
Step 6
Add cinnamon and cardamom and blend.
Step 7
Add maple syrup and stir to blend.
Step 8
Pour equal amounts of syrup in four jars.
Step 9
Fill cups with pudding. Syrup will naturally layer as you add pudding.
