Ingredients
4 servings

1 poundsground beef
I used 1.3 because that's the size it came in

2 tablespoonsfajita seasoning

½ cupalmond flour
toasted

2 cupsbroccoli florets
cooked

1 cupfrozen cauliflower rice

0.25white onion
large, chopped

2 cupsshredded cheddar cheese
divided

½ cupshredded mozzarella cheese

½ cupheavy whipping cream

1 tablespooncoconut oil
plus some for greasing
Instructions
Step 1
Preheat oven to 350 degrees and grease 8x8 glass baking dish.
Step 2
Brown ground beef and add 2 tablespoons fajita seasoning once cooked. Mix well.
Step 3
Add ground beef to the baking dish and set aside.
Step 4
In a medium bowl, add 1.5 cups of cheddar cheese and mozzarella cheese. Set aside.
Step 5
Boil broccoli for 2 minutes or until bright green.
Step 6
Remove from heat and water, chop and measure 2 cups.
Step 7
Add broccoli to cheese mixture.
Step 8
Heat 1 tablespoon coconut oil over medium heat.
Step 9
Saute chopped onion and cauliflower rice for 7 minutes, stirring often.
Step 10
When done, add to cheese mixture.
Step 11
Add heavy whipping cream to cheese mixture and combine well.
Step 12
Place cheese mixture on top of ground beef in the glass baking dish.
Step 13
Top with remaining 1/2 cup cheddar cheese and toasted almond flour.
Step 14
Bake for 30 minutes.
Step 15
Serve hot!
