Instructions
Step 1
Start with a clean, dry bowl and beaters. Any grease can mess with the egg whites.
Step 2
Carefully separate the egg whites from the yolks. You only need the whites — no yolk slippage allowed.
Step 3
Beat the egg whites with an electric mixer for about 3 minutes until they start to form soft peaks — they should hold their shape but still look a bit soft at the tip.
Step 4
Add the sugar one spoonful at a time, whipping as you go. Keep beating until the mixture looks glossy and holds stiff peaks. Beat for about 10 minutes
Step 5
Mix in either lemon juice for a bright finish or vanilla extract for a mellow one. Fold it in gently.
Step 6
Spoon or pipe the meringue onto a parchment-lined baking sheet. Keep them small — they puff up a bit.
Step 7
Bake at 200°F (93°C) for 1.5 to 2 hours, until they’re dry to the touch. Let them cool in the oven with the door slightly ajar.
