Instructions

Step 1
Wash and peel (optional) the potatoes.
Step 2
Using a mandolin or sharp knife, slice them as thinly as possible, the thinner, the crispier!
Step 3
Place the slices in a bowl of cold water for at least 10 minutes to remove excess starch (this helps them crisp up).
Step 4
Drain and pat dry thoroughly with a clean tea towel or kitchen paper.
Step 5
Place in a bowl toss the slices in olive oil and sprinkle with salt and the dried rosemary.
Step 6
Preheat your air fryer to 180°C. Place the potato slices in a single layer in the basket (you may need to work in batches). Air fry for 10-15 minutes, shaking halfway through, until golden and crisp. Keep an eye on them in the last few minutes to avoid burning.
Step 7
Let them cool slightly, they’ll crisp up even more, then dig in!
