Instructions

Step 1
cut corn off the cob. Add to saucepan with butter, crushed garlic and chilli powder. Cook on medium heat, stirring, for 3-5 minutes until corn is beginning to turn golden, then remove from heat. Remove 2 tablespoons of the corn and set aside for garnishing later.
Step 2
Add the cream cheese, sour cream, corn relish, fresh chives and 2/3 of the grated cheddar and mozzarella cheeses to the saucepan. Season with salt and pepper. Stir over low heat until combined and cheeses are melted.
Step 3
Place in ovenproof dish and top with the remaining cheese. Bake in oven for approximately 20-30 minutes or until bubbling and golden.
Step 4
To serve, top warm corn dip with reserved corn and fresh herbs.
