Step 1
Use a muddler to gently crush the mint leaves in a glass. Add the Cynar, soda water, grapefruit juice, simple syrup, and lemon juice, then fill the glass with ice. Swizzle to mix. Garnish with a sprig of mint and serve with a straw.
