Step 1
Add ⅓ of the mushrooms and a good amount of salt to a pan and cook till brown.
Step 2
Then with the rest of the mushrooms, add 2 tbsp oil, garlic, rosemary, apple cider vinegar, coconut aminos, maple syrup and the rest of the seasonings. Cook until the mushrooms look glazed.
Step 3
Put all of the mushrooms in the pastry, leaving a ½ inch gap around the edges. Brush the edges with butter and add oregano, pepper, gochujang flakes (or chili flakes), salt
Step 4
Cook for about 15 minutes, take out and add the ricotta. Sprinkle with more gochujang flakes, oregano, pepper and serve.
