Instructions

Step 1
For the brownies, melt the dark chocolate and butter in a double boiler. Let cool briefly. Combine the vanilla sugar, brown sugar, and eggs. Add the chocolate-butter mixture and mix. Combine the flour, baking powder, salt, and cocoa powder and stir into the remaining batter. Grease a 28.5 x 23 cm brownie pan.
Step 2
Preheat oven to 180°C (160°C fan-assisted). Pour the batter into the pan and bake in the preheated oven for approximately 20-25 minutes. Allow the brownies to cool completely. Then remove 1 tablespoon of each brownie and break into small pieces. Spoon into dessert glasses (approx. 125ml capacity).
Step 3
For the cherry compote, drain the jar of morello cherries through a sieve. Retain 400ml of the juice. Pour the juice into a saucepan. Stir about 2 tablespoons of the juice with the cornstarch and powdered sugar until smooth. Heat the remaining juice in the saucepan. Add the cornstarch and juice mixture and bring to a boil until it begins to thicken. Now add the drained cherries and stir well. Let cool slightly.
Step 4
Whip the cream until stiff and mix with the low-fat quark and powdered sugar. Spoon 1-2 tablespoons of the cherry mixture onto the brownie pieces in the glass. Fill the cream and quark mixture into a piping bag. Pipe a layer of cream onto the cherry mixture. Continue to fill each dessert glass with another layer. Refrigerate the dessert glasses until ready to serve.
