Ganache

140gunsalted butter
110gcaster sugar
140glight brown sugar
1 tspvanilla extract
1egg
140gplain flour
substitute some of this for cocoa powder
140gstrong white bread flour
1 tspbicarb
1 tspbaking powder
1 tspsea salt
Chocolate orange chunks
Orange zest

Instructions
Ganache
Step 1
To make ganache chop the chocolate and heat the cream (not boil), then pour the cream over the chocolate and let sit until melted, then stir and let set in fridge. Once set in fridge, make 10 balls and freeze.
Cookie dough
Step 2
Cream butter and sugars
Step 3
Add vanilla to egg then add to butter sugar mix
Step 4
Sieve remaining ingredients and add gradually to wet mix then zest in orange zest and fold in chocolate chunks
Construction
Step 5
Weigh out equal 10 balls of cookie dough and wrap around each frozen ganache ball
Step 6
Refrigerate for 1-2 hours
Step 7
Bake at 150c /gas 2 for 12-15mins

Once done, take out and let cool on a rack, while still hot, add a orange segment
