350 gramsasparagus tips
200 gramsgreen beans
400 gramsspaghetti
1leek
trimmed and sliced
1 tablespoonolive oil
plus 1 teaspoon extra for serving
1 tablespoonunsalted butter
100 gramsheavy cream
2 gramsfresh parsley
chopped
50 gramsparmesan cheese
grated
73.5 gramswhite wine
1 tablespoonfresh mint leaves
1 tablespoonchives
chopped
1lemon
zest and juice
Instructions
Step 1
Step 1. Bring a pan of salted water to the boil and place a steamer or colander over the water. Steam the green beans and asparagus until just tender, then set aside. Boil the pasta according to package instructions.

Step 2. While the pasta cooks, fry the leeks gently in the olive oil and butter for 5 minutes until soft. Add the heavy cream to the leeks and warm through very gently, stirring constantly to prevent splitting. Add the parsley, mint, chives, and steamed vegetables with a splash of pasta water to loosen the sauce.

Step 3. Drain the pasta and stir it into the sauce. Adjust seasoning with salt and pepper. Serve topped with parmesan cheese and drizzled with the extra olive oil.
