2bananas
overripe
1.5eggs
medium, or 2 small eggs
350gOat flour
or blended, porridge oats
450mlMilk
semi-skimmed or plant based milk like oat works best, buttermilk is great too
1 tsphoney
1 tspbaking soda
1 tspcinnamon
5gplant based Butter
to line the pan, or butter of choice

Step 1
Preheat the oven to 190-200°C (gas mark 5-6 or 375-400 F)
Step 2
Mix the oat flour (or blended oats) with milk using a whisk. For the blended oats place the required amount in blender and blended for 30-35 seconds with a 1000W blender. Let the oats absorb milk (for 15-20 minutes) whilst you mix the other ingredients.
Step 3
In another bowl mash the bananas using a fork.
Step 4
Add the eggs to the bananas and mix well
Step 5
Add the cinnamon, salt, bicarbonate of soda and honey. Mix well. At this stage if you wish you would also add the flaxseed, Vanilla extract and protein powder.
Step 6
Now add the banana/egg mixture to the oat/milk mixture and mix very well. Here you can add the (chopped) Dark chocolate if you wish.
Step 7
Line the pan with butter and place in the oven
Step 8
After 25-30 minutes turn the banana bread to the other side (especially if using gas oven). Note place the bread as high as possible so it grows the most. Using a toothpick check at 30, 45 and 50 minutes whether its cooked.
