Ingredients
6 servings
1 Tbspespresso
finely ground, or dark coffee
1 Tbspkosher salt
1 Tbspsmoked paprika
3 tspbrown sugar
2 tspgarlic powder
2 tsponion powder
1tri tip
1 tspdried thyme
crumbled
1 tspground black pepper
1 tspground cumin
1 tspground coriander
½ tspcinnamon
¼ tspground chipotle pepper
¼ tspground allspice
¼ tspground allspice
2 Tbspdijon mustard
Instructions
Step 1
Mix all of the spices and sugar thoroughly
Step 2
Place trimmed Tri Tip on baking rack and pat dry with paper towels.
Step 3
Spread mustard over tri tip
Step 4
Sprinkle dry rub over all tri tip surfaces. Be heavy handed and pat spices firmly into meat. Be sure to cover all surfaces
Step 5
Let rest 1 hour on the counter, or overnight in the fridge. If refrigerated, remove 1 hour before cooking.
Step 6
Place tri tip in smoker at 225–250°F. Cook until internal temp reaches 120°F
Step 7
Move tri tip to a preheated high-heat grill. Sear all sides until internal temp reaches 140°F
Step 8
Remove from grill, tent loosely with foil, and rest 15 minutes.
Step 9
Cut against the grain for maximum tenderness.
