Ingredients
1 servings
3 poundsmeat strips
lean
1 cupbourbon
2 cupscatsup
½ cupbeer
½ cupcola
½ cupdr pepper
¼ cupbalsamic vinegar
or red wine
3 tablespoonsgarlic
chopped
1 tablespoonchili powder
2 tablespoonsground chipotle
smoked, dried jalapeños, optional
2 tablespoonshickory liquid smoke
if dehydrating
2 tablespoonsworcestershire sauce
1 tablespoonmolasses
or maple syrup
2 tablespoonswhole grain mustard
½ cupbrown sugar
Instructions
Step 1
Mix all ingredients in a blender or food processor.
Step 2
In a pot or saucepan, bring marinade to a gentle simmer for 10 minutes.
Step 3
Remove from the heat. If it is too thick or syrupy, use beer or water to thin.
Step 4
Add marinade and meat to a plastic bag or container and marinate in the refrigerator for 12-24 hours.
Step 5
(dehydrating) Set dehydrator for 145-165°F until the strips bend but don't break.
Step 6
(smoking) Smoke with hickory wood at 175-200°F.
