Step 1
Crust- Add the Erythritol powder, almond flour, melted butter, & vanilla in a bowl and mix till it gets crumbled.

Now, transfer the crust mixture to a springform pan, evenly press it with the spatula, and chill in the fridge for 10 minutes.

** If you would like a crisper base, you can bake the crust for 8 to 10 minutes at 350°F and then let it cool before assembling the cheesecake.

Filling- Add the softened cream cheese and Erythritol powder in the large bowl and beat it till it gets smooth.

Then, add the vanilla extract to the cream cheese and mix again to combine.

Next, add the chilled heavy cream to a(nother) chilled bowl and beat the cream to form the stiff peaks.

Then, softly fold the whipped cream into the cream cheese and mix well.

Then, cover the crust with half of the cheesecake filling and place some strawberry slices over the filling.

Then, add more cheesecake filling on top of the slices, smooth the top with the spatula, then arrange more strawberry slices over the filling again.

Now, put the cheesecake in the fridge for four hours or the whole night.
