Filling

½ cupthickened cream

220gdairy free cream cheese
at room temp

1 tspvanilla extract

lemon zest
to taste, optional
To assemble
Instructions
Step 1
Add filling ingredients to a large mixing bowl and beat for 3 minutes until thick and fluffy. Set aside.
Step 2
Unwrap the Easter egg and gently press a knife through the seem to slice it in half (pour boiling water over your knife to prevent the chocolate from cracking).
Step 3
Crush the biscuits into crumbs and place in a bowl with melted butter, mix to combine.
Step 4
To assemble, spoon the crumbs into the Easter egg for the cheesecake base. Top with cheesecake filling and refrigerate for a minimum of 4 hours to set.
Step 5
Remove from the fridge and decorate with toppings.
