Instructions
Step 1
To make the base, melt butter and add to crushed biscuits and mix until combined.
Step 2
Press the biscuit mixture into the base of a lightly greased 20cm springform pan lined with baking paper. Chill in the refrigerator.
Step 3
To make the filling, melt Caramilk, reserving one row, in the microwave in 30 second intervals until smooth.
Step 4
Combine softened cream cheese, sugar and Baileys in a large bowl. Beat with mixers until combined and creamy.
Step 5
Melt gelatine in boiling water and mix thoroughly. Add the gelatine and Caramilk to the cream cheese mixture and beat until combined. Set aside.
Step 6
With clean beaters, whip the thickened cream and then fold through the Caramilk mixture. Pour into the prepared springform pan and chill overnight or for at least 4 hours.
Step 7
Once set, remove the cake from the pan, top with whipped cream, Caramilk shavings from the reserved chocolate and berries
