6 cupslow-sodium beef broth
or chicken

1 cupzucchini
diced
1 cupchayote beans
or green

1 cupcarrots
diced, optional, skip/reduce for lower carb

2 cupsspinach
or kale

3cloves garlic
minced

1onion
small, diced

1 Tbspolive oil

Salt

pepper

oregano

cumin
to taste
Instructions
Step 1
Heat oil in a pot, sauté onion + garlic.
Step 2
Add broth, bring to simmer.
Step 3
Add meatballs, carrots, zucchini, and beans; cook 12–15 min.
Step 4
Stir in spinach at the end until wilted.
