Instructions

Step 1
Dry duck with paper towel
Step 2
Add duck skin side down onto plate to steam with and add salt, 5 spice and shoaxing wine on the meat part and rub
Step 3
Turn the skinside up and use paper towel to get rid of any seasonal/wine that is on the skin. Only add some salt on the skin side
Step 4
Put into fridge to marinate overnight
Step 5
Prepare steamer, once the water is boiling add the duck and and steam for 12min on medium heat
Step 6
Make sauce by combining all sauce ingredients
Step 7
Prepare ice bath and add duck in once cooked
Step 8
Once cold use paper towel to get rid of excess water and cut into thin slices
