Instructions

Step 1
Rinse the rice under cold water until the water runs clear to remove excess starch. In a medium saucepan, combine the rice, milk, vanilla extract, sugar, and salt. Bring to a gentle boil over medium heat, stirring occasionally. Once boiling, reduce the heat to low and add the cinnamon stick. Simmer for 25 minutes, stirring every 5 minutes to prevent sticking. After 25 minutes, stir in the chopped prunes and shredded coconut. Continue to simmer for another 10 minutes, or until the rice is tender and the pudding has thickened. Remove the cinnamon stick and discard it. Let the pudding sit for 5 minutes before serving to allow it to thicken further.
