Instructions

Step 1
1. Line a baking sheet or countertop with wax paper or parchment paper.
Step 2
2. In a medium saucepan, combine 2 cups sugar, 1 stick (½ cup) butter, 3 tablespoons cocoa powder, and ½ cup milk. Stir over medium heat until the butter melts and the mixture comes to a full rolling boil.

3. Once boiling, continue to boil for 3 minutes, stirring occasionally.
Step 4
4. Remove from heat and stir in 1 pinch salt, 1 teaspoon vanilla extract, and ½ cup peanut butter until smooth.
Step 5
5. Add 3 cups quick oats and stir until fully coated.
Step 6
6. Drop spoonfuls of the mixture onto your prepared wax paper. Work quickly as the cookies will start to firm up as they cool.
Step 7
7. Let the cookies cool at room temperature for 30–60 minutes, or until firm and dry to the touch.
