Low Carb Peanut Butter Cookies

This is a variant of my Keto Chocolate Chip Cookies, using peanut butter in place of cashew butter, and omitting the chocolate chips. The result is a healthy peanut butter cookie that has only 1 g of net carbs. These taste just as good as traditional peanut butter cookies, without all the butter, oil, added sugar, and refined flour. The peanuts provide plenty of healthy fats, along with some fiber, protein, B3, and manganese

Instructions

Step 1
Preheat your oven to 350F, and line a large cookie sheet with parchment paper

Mix together the nut butter, sweetener, egg, vanilla, and baking soda until just combined

Note that my peanut butter is salted. If yours is unsalted, add 1/2 tsp (3 g) of salt to the dough

Scoop the cookies into 24 cookie dough balls, about 17 g each. Roll them in your hands, and place onto a parchment lined cookie sheet. Press down to your desired thickness, shape into a circle, and cross with a fork. These will puff up and expand just slightly when cooking

Bake for about 10 min at 350F, or until lightly golden brown. Allow them to cool totally on the pan before removing
