Carrot, Potato and Zucchini Fritters with Avocado Ranch

Delicious and easy to make, these fritters combine carrot, potato, and zucchini for a tasty treat. Serve with avocado ranch for a delightful dip.

Instructions

Step 1
Steam potato and carrot for 15 min.
Step 2
In the meantime, grate zucchini and squeeze out excess water.
Step 3
Once cooled, add potato and carrot to a bowl with zucchini and mash.
Step 4
Add flour and mix well.
Step 5
Form your circles with a little olive oil rubbed between your hands.
Step 6
Add to airfry or oven for 400 F for 10 min (In the oven it might need 15 min).
Step 7
Serve with dip and enjoy!
Step 8
For avocado ranch: Add everything to blender and blend!
