Pinwheel Cookies
Makes 3 doz cookies.
Pinwheel cookies are a wonderful christmas cookie. Original recipe called for chocolate filling, but a date filling can be substituted. You can double the dough recipe, do half chocolate and half date filling.

Ingredients

Dough
½ csolid vegetable shortening
½ cbrown sugar
firmly packed
½ cGranulated Sugar
½ csmooth peanut butter
3 tablespoonsmilk
1egg
2 call-purpose flour
sifted
½ tspsalt
½ tspBaking soda
Chocolate filling
Date filling
Instructions
Step 1
In a large mixing bowl with an electric mixer, combine shortening, brown sugar, granulated sugar and peanut butter
Step 2
Add egg, and milk, beat until light and fluffy
Step 3
Sift flour with salt and baking soda
Step 4
Add flour mixture to shortening mixture, blend well
Step 5
Roll dough into an oblong shape, 1/4 inch thick
Step 6
Cover dough with waxed paper or clean towel while preparing the filling
Chocolate filling
Step 7
Melt morsels over hot water (double boiler) mix butter with melted chocolate. Let cool slightly
Date filling
Step 8
Cook dates, water and sugar until thick stirring constantly.
Step 9
Remove from heat and add nuts. Let cool slightly
Cookie assembly
Step 10
Spread filling on the rolled out dough
Step 11
Roll up like a jelly roll. Wrap in wax paper and refrigerate several hours or overnight
Step 12
To bake cut roll into slices 1/4inch thick, place slices on ungreased baking sheets
Step 13
Bake in preheated 375-degree oven 10 to 12 mins or until lightly browned
Step 14
Remove from baking sheets and let cool on racks
