Instructions

Step 1
-Preheat oven to 400f
Step 2
-Saute onion in butter over medium heat until transluscent and beginning to brown
Step 3
-Add garlic and continue to cook for 2 minutes
Step 4
-Add flour and cook 3 minutes while stirring
Step 5
-Slowly add in chicken stock while whisking
Step 6
-Once all the chicken stock is added, whisk in the milk
Step 7
-Add salt, pepper, thyme, nutmeg, continue to cook until the sauce thickens
Step 8
-Grease your baking dish with butter. Shingle potato slices. Between layers sprinkle with salt, add the sauce, and divide the cheddar evenly. Use the Parmesan on the top layer.
Step 9
-Cover the pan with foil and bake for 1 hour. Remove the foil and continue to cook for 35 more minutes.
