Instructions

Step 1
Into the bowl of the stand mixer whisk your 1:1 flour blend Add all remaining dry ingredients and mix well to combine

Add liquids Mix with the paddle attachment. Begin on low to combine then increase to medium high speed for 5 minutes until dough is cohesive and fluffy.
Step 3
Deposit dough into your prepared loaf pan Lightly wet your hands and use them to smooth out the top. Using a wet plastic bench scraper or spatula round the sides up towards the middle of the loaf and smooth the top again
Step 4
Lightly spray the top with oil and cover loosely with plastic wrap. Proof until increased by 50% or just above the top of the pan Score the top with 3 or 4 diagonal slashes that are ¼ inch deep
Step 5
Bake at 400 for 50-60 minutes. The bread is done when the internal temperature is 210 F. Remove from the pan to a cooling rack and place on one side to cool for 20 min then rotate to the other side for 20 min before setting upright.
Step 6
Cool for at least 4 hours (preferably at least 6). The extended cooling time allows the starches and moisture to properly set and distribute and helps prevent gummy, inconsistent results.
