Ingredients

1 boxMuffin Mix
½ cupButter
unsalted, melted
2eggs
large, beaten
1 x 15 ozcan Whole kernel corn
drained
1 x 15 ozcan Cream-style sweet corn
1 cupSour cream
full fat, or full-fat Greek yogurt
1 TbspHot honey
1 lbBacon
cooked until crisp and crumbled
2Fresh jalapenos
seeded and finely diced
1 x 4 ozcan mild green chiles
2 cupsShredded pepper jack cheese
reserve some for topping
Instructions
Step 1
Preheat oven to 400°.
Step 2
Mix all ingredients together in a large bowl, then transfer to a baking dish sprayed with cooking spray.
Step 3
Top with extra cheese, bacon, and jalapeno slices. Bake until set in the center*.
Step 4
Garnish with flakey salt, chopped chives and drizzled honey as desired.
