Instructions
Step 1
Bring water to a boil, add the salt and stir in the grits, cook until grits are soft with very little crunch to the grains, about 10-15 mins (but keep tasting as you go).
Step 2
Stir in the cream cheese and butter, mix until incorporated.
Step 3
Pour the grits into a 8x8 parchment-lined baking dish. Let cool on the counter 30 minutes or so, then place in the fridge to firm up for a few hours or overnight.
Step 4
Cut the grits into squares, dip in the egg mixture, then in the breadcrumbs, then shallow fry on all sides.
Step 5
Transfer to a paper towel lined plate to drain. Serve with anything and love it!
