Step 1
Put three parts cool water and one part white vinegar into a bowl. Drop the berries in without overcrowding, and let them soak for 2 minutes (no more or less). If you are soaking raspberries, don't soak them any longer than 30 seconds. After they've soaked, remove them and add them to a colander. Rinse them well, to remove the taste of vinegar, then move them to paper towels to dry. Blot out as much surface moisture as possible. Afterwards, let them air dry for a couple minutes. Once dry store them in the following ways: Strawberries - put them in an air tight container or jar. Line the jar with fresh paper towels. Once you put the berries in, cover them with fresh paper towels, seal the jar and put it in the fridge. Blueberries - put these in a breathable container for storage. They can go back into their clam shell if you would like. Blackberries and Raspberries - line fresh paper towels into a shallow single layer container. Lay out the berries and then leave the container cracked for air flow in the fridge. If any are soft and squishy, remove them from the batch.
