Instructions
Step 1
In a medium bowl, combine salt, brown sugar, paprika, garlic powder, ground mustard, and pepper. Mix with fingers, breaking up any clumps, until blended.
Step 2
Pat pork chops dry with paper towels and place in the bowel.
Step 3
Rub all over with spices mixture until evenly coated.
Step 4
Cover bowl with plastic wrap and refrigerate for 4 hours or overnight.
Step 5
About 30 minutes before cooking, remove chops from refrigerator to take off chill.
Step 6
Heat oven to 400°F.
Step 7
Heat large, oven-proof skillet over high heat.
Step 8
When hot, add the oil.
Step 9
Add the pork chops to the skillet and brown on one side, about 2 minutes.
Turn, and brown another 1 minute.
Add butter or oil if pan runs dry.
Step 10
Transfer skillet to oven.
Step 11
Bake, until the chops reach 400°, about 4 to 6 minutes.
Step 12
Remove the skillet from the oven, and transfer chops to either serving platter or individual plates. Drizzle pan juices over chops.
Step 13
Garnish with parsley, and add mashed potatoes.
