Instructions

Step 1
Place the raspberries, blackberries, and blueberries into a medium saucepan.
Step 2
Sprinkle the sugar over the berries, then add the lemon juice.
Step 3
Use a spoon to gently mix so the sugar begins coating the fruit.
Step 4
Place the saucepan over medium heat. Cook for 5–8 minutes, stirring occasionally, until the berries begin to soften, release their juices and the mixture starts to bubble gently
Step 5
Raspberries will break down quickly; blackberries and blueberries will stay more intact—this is normal.

(Optional) Thicken the Filling

Step 6
In a small cup, mix cornstarch and cold water until smooth (a slurry).
Step 7
Pour the slurry into the berry mixture while stirring.
Step 8
Continue cooking for 1–2 more minutes until it thickens.
Step 9
Remove the pan from heat and let the mixture cool
Step 10
Spoon the berry filling into warm crepes and roll, fold or stack them.
