Instructions

Step 1
In large bowl using electric mixer on medium speed, beat butter and oil 1 minute. Add 1/2 cup (125 mL) granulated sugar, icing sugar, egg and vanilla. Beat until fluffy and light in colour, about 2 minutes. Add flour, baking soda and salt. Mix on low until just incorporated, about 30 seconds. Freeze dough 15 minutes.
Step 2
Shape cookie dough into 2 tbsp (30 mL) balls. Place on parchment-lined baking sheets about 2 inches (5 cm) apart. With slightly moistened hands, press dough evenly to 1/4-inch (6-mm) thickness. Sprinkle generously with granulated sugar.
Step 3
Bake in batches in centre of preheated 350F (180C) oven until edges set and are just golden, about 12 to 14 minutes. Cool 10 minutes, then transfer to rack to cool completely. Store in airtight container.
