Instructions
Step 1
In a greased 5- or 6-quart slow cooker, layer half the potatoes.
Step 2
Top with half the cooked sausage, half the onion, half the chiles, and half the cheese.
Step 3
Repeat layers, gently pressing down to compact.
Step 4
In a large bowl, whisk together eggs, milk, salt, and pepper until well blended.
Step 5
Pour egg mixture over the layers in the slow cooker.
Step 6
Cover and cook on low for 7 hours or until a thermometer reads at least 160°F.
