Sauce
½ cupbourbon
or apple juice for non-alcoholic
½ cupsoy sauce
½ cupbrown sugar
¼ cupketchup
2cloves garlic
minced
1 tspgrated ginger
½ tspcrushed red pepper

Step 1
1. Make the Sauce In a bowl, whisk together
Step 2
Marinate the Pork Reserve half the sauce for cooking later. Toss pork cubes in the other half. Cover and refrigerate for 30 minutes to overnight.
Step 3
Sauté in Instant Pot Select Sauté mode. Add oil and sear marinated pork cubes until browned (about 5–6 minutes). Cancel Sauté.
Step 4
Pressure Cook Add reserved sauce and chicken broth. Lock lid, set to High Pressure for 15 minutes. Quick release when done.
Step 5
Thicken Sauce Switch back to Sauté. Stir in cornstarch slurry. Simmer 2–3 minutes until sauce is glossy and thick.
Step 6
Serve Garnish with green onions and sesame seeds. Serve over rice or noodles.
