Instructions

Step 1
Mix dry ingredients: In a large bowl, combine the rolled oats and ground flaxseed

Add wet ingredients: Add the peanut butter, honey (or maple syrup), and vanilla extract to the dry ingredients. Mix well until everything is thoroughly combined.
Step 3
Add mix-ins: Fold in the mini chocolate chips or cacao nibs. Make sure they are evenly distributed throughout the mixture.
Step 4
Form bites: Using your hands or a small cookie scoop, form the mixture into small bite-sized balls. If the mixture is too sticky, you can refrigerate it for about 15-20 minutes to make it easier to handle.
Step 5
Chill: Place the energy bites on a baking sheet or plate lined with parchment paper. Refrigerate for at least 30 minutes to allow them to firm up. Store: Once the bites are firm, transfer them to an airtight container. They can be stored in the refrigerator for up to a week or in the freezer for up to three months.
