Jay's pierogi recipe

You can fill pierogi's many ways, as well as serve them many ways. Fried potato and cheese is my favorite, with it without cooked onions.

Instructions

Dough

Step 1
In a stand mixer with a dough hook, combine flour, egg, and salt.
Step 2
Add oil to water, and begin to add to dough slowly, add more as the water and oil get incorporated.
Step 3
Continue mixing until the dough is smooth.
Step 4
Remove dough from blender and wrap in plastic wrap for 1 hour at room temperature to allow the gluten to bind correctly.

Filling

Step 5
Meanwhile, boil the peeled potatoes until soft like making mashed potatoes.
Step 6
Drain and mash the potatoes, adding the butter and cheddar cheese, until smooth.
Step 7
Set aside until the dough is done resting.

Form the Pierogi's

Step 8
Unwrap the dough and split into 4 pieces.
Step 9
Roll the dough onto a clean flat counter until thin, about the thickness of a thin spaghetti noodle. If you aren't good at judging this, you can lay two dry noodles on either side of your rolling pin and stop when you reach them when you roll the dough out.
Step 10
Cut pierogi dough into circular shapes about 3 to 4 inches across. Reroll scraps as you go.
Step 11
Add 1 tbsp balls of filling, and wrap dough around, making a half moon shape, pinching or folding the seam shut. Do not get filling on the seam or it will not seal.

Begin cooking Pierogi's

Step 12
Add pierogi to a boiling pot of water, let boil for 4 to 5 minutes, they should begin to float.
Step 13
Remove from the water and place in bowl with melted butter to coat them, then larger bowl to store until ready to serve/fry

Fry pierogi

Step 14
Add pierogi to hot oil, and fry until golden brown.
Step 15
Remove from oil and let drain on paper towel lined bowl.

Notes

You can eat them boiled only.

You can air fry them, instead of deep frying

You can sauteed them in butter and onions on the stove, to instead of deep frying them.

They can be used as an ingredient in a casserole.

You can add onion to the filling when mixing

They can be frozen on a cookie sheet and then put in freezer bags
