Instructions
Step 1
Prep: Preheat oven to 325°F (165°C). Grease your mini-muffin tin heavily.
Step 2
In one large bowl, whisk the eggs and yogurt/cottage cheese until smooth.
Step 3
Add the mashed beans, collagen, salt, and spices. Whisk vigorously until the sweet potato is fully incorporated into the egg base.
Step 4
Stir in the shredded cheese and finely chopped greens.
Step 5
Use a small scoop or a pitcher to pour the batter into the muffin cups, filling them about 3/4 full.
Step 6
Bake: Bake for 12–15 minutes until the centers are set
