Instructions
Step 1
Preperation: Preheat your oven to 180°C and grease two large rusk pans.
Step 2
Rub in Butter: Mix the flour and salt. Use your fingertips to rub the butter into the flour until it looks like coarse breadcrumbs.
Step 3
Mix Liquids: Whisk the eggs and sugar together. Add the condensed milk and boiling water, and stir well.
Step 4
Form Dough: Add the liquid mixture to the flour. Knead lightly until a soft dough forms.
Step 5
Shape: Roll the dough into small balls (about the size of a golf ball) and pack them tightly against each other in the pans.
Step 6
Bake: Bake for 30–45 minutes until golden brown.
Step 7
Dry Out: Let them cool slightly, break them apart, and dry in the oven at 70°C for 6–8 hours (or overnight with the oven door slightly ajar).
