Instructions
Step 1
Prep the potatoes
Wash and cut 2 pounds potatoes into wedges or bite-sized chunks.
No need to peel unless you want a softer finish.
Step 2
Toss potatoes with 1 tbsp melted butter, 1 tsp salt, 1/2 tsp garlic powder, 1/4 tsp smoked paprika, and 1 tbsp reserved bacon fat.
Mix well so everything is coated evenly.
Step 3
Spread on a tray (don’t overcrowd).
Bake at 200°C (fan 180°C) for 35–45 minutes, flipping halfway.
Goal: crispy outside, soft inside.
Step 4
Prepare toppings while baking
Cook 12 slices bacon until crispy, then chop.
Shred 4 oz cheddar + 4 oz Manchego.
Dice 2 scallions.
Step 5
Assemble
Once potatoes are done, transfer to a serving dish or leave in tray.
Sprinkle over cheese and bacon
Step 6
Melt & finish
Return to oven for 5 minutes until cheese melts.
Step 7
Garnish & serve
Top with scallions and sour cream.
Serve immediately.
