Watermelon Rind Candy (No dry method)
No waste watermelon rind candy, without needing to dry the rind!

Instructions
Step 1
Cut rinds into 1/4in strips. Place into a container and pour sugar over. Refrigerate for 24 hours.
Step 2
Pour macerated water rinds into a pan and bring to a boil.
Step 3
Once boiling turn heat to a simmer and continue to cook for 20-30 mins gently stirring frequently till water evaporates and sugar starts to crystallize.
Step 4
When finished sprinkle with citric acid for a sourness.
Step 5
Store in airtight container for a few months
