Instructions

Step 1
Heat a large pan on medium heat. Cut chicken breasts into 1 to 1.5 inch cubes.
Step 2
Scramble egg and pour into a shallow pan. In a second shallow pan add all dry ingredients.
Step 3
Dredge chicken breast pieces through egg, then coat in panko mixture, pressing to adhere. When finished, you can pour the rest of the panko over the pieces.
Step 4
Raise heat to medium high and add oil. Place chicken pieces into the oil and do not overcrowd. Work in batches.
Step 5
Cook pieces on one side until golden brown, about 3 minutes. Turn over and repeat. Remove to a paper towel lined plate to drain. Repeat batches, adding oil as needed. Don't forget to let the oil come back up to temperature.
Step 6
These are great on their own or served with your favorite Asian-style sauce over rice. Add broccoli, water chestnuts, bell peppers and onions or any other vegetables you like!
