Step 1

Cool: Let them cool on the pan for a few minutes before moving them to a wire rack.
Step 2

Bake: Place them on a baking sheet lined with parchment paper. Bake for 8–10 minutes, or until the edges are set but the cookies haven't started to brown (you want to keep those colors bright!).
Step 3

Slice: Preheat your oven to 350°F. Take the chilled dough and slice it into discs about 1/4-inch thick. If you want half-moon rainbows, cut the discs in half.
Step 4

Chill: Wrap your rainbow log or stack in plastic wrap and refrigerate for at least 1 hour (this makes it much easier to slice without smearing the colors).
