ALISON HOLST'S FABULOUS FUDGE

Alison & Simon Holst. Who doesn't like homemade fudge? Making it has been a popular pastime with children for generations. This microwaved version is actually easier and more reliable than traditionally cooked fudge.
I made it first in June 2011 and everyone found it to be 'yum'!!!

Instructions
Step 1
Mix all ingredients, except vanilla, in a microwave bowl resistant to heat.
Step 2
Microwave on High for 10-12 minutes, stirring every 2 minutes until all sugar has been dissolved, the mixture has bubbled vigorously all over the surface and a little dropped in cold water forms a soft ball.
Step 3
Add the vanilla and beat the mixture for about 5 minutes, until it loses its gloss. Before it sets, quickly turn it onto a lightly buttered 20cm square pan. When firm cut into squares.
VARIATIONS:
Step 4
For chocolate fudge, add ¼ cup cocoa powder to the sugar.
Step 5
For nut fudge, sir in ¼ c chopped walnuts to the cooked mixture.
